The food service sector faced significant disruption due to COVID-19, yet many Sustainable Diner (TSD) partner restaurants continued pursuing eco-friendly practices. To support their recovery and transition to a “better normal,” TSD developed learning modules based on five key sustainability principles, informed by a partner survey to address the sector’s needs.
ASSIST reinforced TSD’s sustainability principles by producing flexible training materials, including pre-recorded videos and digital and printed handouts. These allowed restaurant partners to access capacity-building resources at their own pace, ensuring continuity beyond the project’s active period.
Partners reported that the training materials were practical, accessible, and easy to integrate into daily operations. Many shared that the modules increased their confidence in applying sustainable practices and motivated long-term adoption. By tailoring learning to their schedules, the project enabled stakeholders to internalize principles effectively, fostering lasting change in eco-friendly dining practices.
